Southwest Inspired Salad

This versatile salad has not only a variety of colors, textures and flavors, but packs in nutrients, fiber, healthy protein, and healthy fat! You can easily add or omit items depending on what you have on hand, or what’s in season.

Add the heavier vegetables first and season with salt and pepper, drizzle with olive oil and lime juice and toss. Let those marinate while you chop the lighter vegetables and mango, then season and toss again. Add the nuts or seeds, avocado and cilantro and any greens you may choose at the end. You will not need a dressing this way – it will be perfectly dressed, just season to your own taste!

Suggested ingredients:

tomato, cucumber, broccoli, radish, onion, bell pepper, salt, pepper, olive oil, lime juice, black beans, corn, mango, jalapeño, avocado, cilantro, pepitas (pumpkin seeds)

You can add some greens at the end, if you wish, but if you mix them in with the heavier vegetables, they will wilt. I like to serve the jalepeños and cilantro as a garnish (not everyone likes these!)

Feel free to use other fruits and vegetables, nuts and seeds. You could also add a whole grain like quinoa or farro to add another element and really make it a meal! You can also serve it as a salsa along side salmon or spicy shrimp!
